Ribs are the softest, most brittle, and chewy enough to make you cry?! On a pile of noodles, sprinkled with sesame seeds next to the lightly fried spinach and a little toasted sesame oil. Oh. Oh dear.

What is Gochujang Sauce?

These little noodles get their deep and interesting spices in a gochujang sauce. If you are not familiar with it, this is a sauce made with red pepper paste. It is a mixture of sweeteners with a very tasty aftertaste and umami, which are key ingredients in Korean cuisine, with other ingredients such as soy sauce, vinegar, and sweeteners. Gochujang itself is a sweet and sour sauce made by fermenting soybeans, red pepper powder, glutinous rice, and salt, and is often used to flavor meat dishes, soups, stews, and sauces. Galbitang Soup Ingredients

The gochujang sauce gives it a deep flavor, so the ingredient list itself isn’t too long, especially when paired with flavors like ginger and garlic!

  • Trimmed short ribs removed from the bone (recommended trimming/preparing prior to cooking for a top-notch soup experience)
  • red pepper sauce

  • Dry Ramen or Other Fried Noodles

How to Make This Spicy Rib Noodle Soup

Everything is relatively simple because we have our friend Instant Pot who is working for us here.

  1. short ribs. Season generously with salt and then burst undisturbed in IP on sauté mode until the outside is browned.
  2. to taste. Add red pepper paste sauce, tomato paste, ginger, garlic, and shallots to IP, set aside for a while, then add broth.
  3. Cook. High press for 30 minutes. When cooked, the meat becomes really tender.
  4. Noodle! Return to sauté mode, add noodles and cook until soft.
  5. spinach. Roast in a separate pan and add to soup (optional but a nice addition). If it’s your jam, you can even throw it right into the pot!

Place the roasted spinach in a soup bowl topped with falling ribs and drizzle with green onion, sesame seeds and sesame oil. yum!

It doesn’t work with any particular traditional recipe, but this dish has a more culturally specific spicy beef and noodle combo like this home-made dish. What we have here is a very thick and filling soup/noodle combo that makes the perfect base. Then you can actually start customizing from there! We’ve tried a few different beef cuts, short ribs are preferred for tenderness, but others definitely work! If you feel chicken instead, you can totally do it. You can also keep it vegan with a little vegetable broth and topped with marinated crispy tofu or oven-roasted mushrooms. So many possibilities!

If you’re not an Instant Pot owner, don’t worry. After a little while, this dream may still be yours. What if you only have one bag of ramen? Perfect. Throw away those flavor packets and swim through the noodle blocks. What we’re saying is that this ginger, garlic and gochujang sauce combination will make absolutely anything sing.

Is there a difference between red pepper paste and gochujang sauce?

Yes! Because this recipe is mixed with other ingredients, it uses a different taste and spiciness level of gochujang sauce than regular gochujang. If you can only find gochujang, consider adding soy sauce and a little honey or sugar to balance it out.

Can you make this vegetarian?

How can I make it without an Instant Pot?

Bake the short ribs in a large saucepan on the stove with a little oil until a beautiful brown crust. Remove the ribs from the pan, add the tomato paste, ginger, shallots and garlic and cook for a few minutes until the flavor is translucent. Add the beef stock and return the short ribs to the pan. Simmer for several hours on low heat until the short ribs are tender and start to fall apart. Add noodles and cook.

  • One pound short ribs (remove meat from bones, remove fat and cut into small pieces)
  • 1 tablespoon red pepper sauce (More hot pepper paste = hotter! This level can be said to be medium spicy)
  • 1 tablespoon tomato paste
  • 1 tablespoon chopped fresh ginger
  • 6 cloves garliccrushed/chopped
  • One shallotsliced
  • 46 cup meat broth
  • 1016 oz. dry ramen Or other stir-fried noodles (I use 2-3-serving packages)
  • Spinach (optional)
  • over scallions, sesame seeds and/or sesame oil

  1. Set the Instant Pot to sauté mode. Sprinkle generously with salt on the ribs. Fry without disturbing until the outside is browned.
  2. In an instant pot with ribs, add red pepper paste, tomato paste, ginger, garlic, and shallots and fry for 1 to 2 minutes.
  3. Boil for 30 minutes under high pressure. At the end of cooking time, the meat should be very tender and tasty.
  4. Set it back to sauté mode. Add noodles and cook until noodles are soft. Taste the broth and season with salt, pepper and rice vinegar? And whatever else you want.
  5. Fry the spinach in a separate pan (optional).
  6. It serves a noodle bowl topped with ribs, stir-fried spinach, green onion, sesame seeds and sesame oil.

I tried this with other beef cuts, but I didn’t like it very much. It just didn’t soften. I also tried to cook the bone and oiled ribs, which tasted good but the broth was too oily and it was a mess to get the meat out. So, in my opinion, it is better to trim it before cooking.

I bought a package of about 1.5 pounds of beef and by the time the bones and fat were removed, I would have had 0.75 pounds of real beef left. That amount of meat + 2 bags of noodles was the perfect ratio for me!

For broth, I usually start with 4-5 cups, but I definitely realized I needed to add more to the leftovers. Noodles love to absorb liquid.
