Thick, crispy golden brown pan-baked sourdough slices. Because there are two types of cheese that melt the most. Exquisitely caramelized, smokey, spicy, sweet, almost jam-like kimchi and bacon filling. Lordy loo, adventure awaits you too!

And if you really missed your chance here without calling it “roasted kimchi tax”…you’re not wrong.

Ingredients for this grilled cheese

The beauty of grilled cheese is definitely “only bread/butter/cheese”. But if you want to make Sammy gorgeous, you only need a few other things, but not many. It’s very simple though!

  • leaven
  • American cheese (so melted!) and Gruyère cheese
  • Butter (or mayonnaise if you go that route with grilled cheese)
  • Kimchi
  • bacon
  • brown sugar

If you’re not familiar with kimchi, it’s a traditional Korean staple served with spicy fermented cabbage and other vegetables. It has deep ancestral roots in Korean culture and began thousands of years ago as a way to preserve vegetables during the cold winter. Preparations have changed over time and there are many varieties with different levels of ingredients/flavors/seasoning by region, but no matter what they are, they are found on almost every table and take pride in Korean culture to this day.

Let’s Make the Best Kimchi Grilled Cheese Sandwich

The kimchi is a bit watery on its own, so the key is to fry it first with bacon and a little brown sugar to make it a little caramelized and some sort of jam. That’s right, Jamie. The spicy taste of kimchi combined with smoked bacon and the sweetness of brown sugar? I’m fine. Perfect for filling sandwiches.

Here’s how.

  1. Bake until bacon is crispy. Add kimchi and brown sugar and fry undisturbed in a frying pan for a few minutes to dry and caramelize. Transfer it to a bowl.
  2. Prepare the sandwich stack. Bread, Gruyère, Kimchi Mix, American Cheese, Bread. Butter (or mayonnaise!) ready to fry crispy on both sides.
  3. Heat the same pan over medium heat. Low and slow is better for optimal cheese solubility and golden brown finish!
  4. Get ready to fall in love.

Let’s talk cheese

Okay, cheese stuff. As you know, it’s always an important topic. Now, before ignoring that, we think American cheese is essential here for its very good melt modulus. It’s just the classic grilled cheese 101, and we don’t want to mess it up. The Gruyère also melted really well, so for us it was another flavor we loved. We also had cheddar cheese on it, which was also great.

Frankly, we don’t think you can go wrong, but it’s really good to stay American regardless of the different types of cheese you use. That way you get something that melts like dreamy silk.

If we’re honest here, we’ll serve it with other kimchi grilled cheeses…but there are other things that work well too. You can make soft soups like this simple green salad or this lush tomato soup or the bright, relaxing and delicious golden soup.

But we’re also pretty serious about the second sandwich as a side. It’s an absolute dream. Kimchi baked forever.

Pan Fried Kimchi:

  • two cup KimchiChopped (personal preference – not chopped)
  • 6 piece baconchop
  • 2 tablespoons brown sugar
  • pepper to taste

Grilled Cheese:

  • sliced yeast bread
  • american cheese
  • Gruyere Cheese
  • butter or mayonnaise

  1. Place the bacon in a large pan and cook over medium heat until crispy and fat free. Put the kimchi in a pan with brown sugar. Fry in a pan for a few minutes and leave for a few minutes at a time to dry and slightly caramelize. Season with pepper. Transfer to a bowl and clean the pan.
  2. You can make a sandwich with one slice of sourdough, Gruyère cheese, kimchi mix, American cheese, and a second slice of sourdough. Spread butter or mayonnaise on top and bottom of the sandwich.
  3. Heat the same technique over medium heat. Add the sandwiches and cook for a few minutes on each side until golden brown. Cut and serve. Magic.


You generally don’t want to use high heat here because the sandwich will burn without the cheese melted. Medium or low heat will allow the sandwich to stay in the heat longer, melting the cheese and giving it a golden brown appearance.

I usually use about 1/4 cup of kimchi mix for one sandwich. If you have any unused kimchi mixture, keep it in the refrigerator to add to sandwiches throughout the week.
